...beyond the D.O.C.
The Denominazione di Origine Controllata, known by the acronym D.O.C., is the designation used in oenology to indicate and certify a quality wine whose characteristics are attributable to the peculiarities of the production area, such as the nature of the soil, the grape variety, its particular exposure and the specific production methods used (farming systems, pruning, winemaking, and aging of the wine).
In Italy, there are currently over 300 wines with DOC classification.
The official recognition of the DOC takes place through a Decree of the President of the Republic within which the parameters of the production regulations are also defined, and which will be published in the Official Gazette.
The regulations define the requirements that the wine must meet in order to bear the DOC, namely:
the geographical area of production;
the grape variety;
the type of soil used for grape cultivation;
the yield of grapes into wine (to avoid excessive exploitation of the vine);
the production and aging technologies that can be used;
the characteristics that the finished product must have (acidity, dry extract, minimum alcohol content, organoleptic peculiarities)
any possible qualifications of the wine at the time of marketing.
In addition to boasting the D.O.C. for its wines, Tenuta Villa Ornella has obtained the SQNPI (National Quality System of Integrated Production) certification, which aims to enhance plant-based agricultural products obtained in compliance with regional integrated production regulations. The Quality System is recognized at the community level (Reg. Ce 1974/2006). Integrated production (or agriculture) is a voluntary production system that is implemented by complying with the technical standards provided for each type of crop, both regarding protection against adversities and all other agronomic practices such as fertilization and irrigation.
The SQNPI standard imposes a rigorous control system that involves all primary production companies, carried out through product analysis to verify compliance with the requirements.
